delicious apple tart with meringue




Ingredients for 6:


for the pastry dough

 250 g all purpose flour
 50 g corn flour
 125 g caster sugar
 the grated rind of 1/2 lemon
 1/2 tbs baking powder
 1 free range egg
 125 g butter


 for covering 

 500 g apples
 100 g biscuits
 2 egg whits + 1 egg yolk
 250 g powdered sugar


 for the mold

 butter
 bread crumbs



Prepare the dough by hand or using a mixer, mixing all the ingredients. Pick it up into a ball and put in the fridge for 1 hour. Butter a mold and sprinkle it with breadcrumbs. Roll 3/4 of the pastry to obtain a disk slightly larger than the mold to cover the bottom and part of the sides of it.. Sprinkle with a little more of the half of the crumbled biscuits. Peel the apples and cut into slices.  Arrange them on the biscuits and sprinkle with the remaining crumbled biscuits. Whip the egg whites very firm adding 2-3 drops of lemon juice, so to obtain a very stable mass.


Gently stir in the icing sugar (I added it in two times while lowering the speed of the electric mixer). Pour the mixture over the apples. With the remaining dough close the edges with a cord and make stripes for the tart. Brush with the beaten egg yolk. 


Bake at 180° for 40 minutes until you see that the meringue is completely firm and stable. To avoid to brown the meringue too quickly cover it after 15 minutes with a sheet of aluminium, so to give time for the pastry to cook well. Then remove the sheet for the last 10 minutes of cooking.
