baked donuts



This baked donuts are perfect even the day after, are very soft and lighter respect of the fried version. To make them softener I substituted milk with buttermilk. Here is the recipe. Perfect also for Carnival. 




Ingredients for about 20 donuts:

1 egg at room temperature
225 ml buttermilk
300 g strong flour 
150 g all purpose flour 
60 g caster sugar 
7 g organic dry yeast 
100 g butter at room temperature 
2 tbs vanilla extract 
1 pinch of salt

how to make:
Sift the flour with baking powder. Mix in the food processor the following ingredients: the egg, slightly beaten, salt, vanilla, buttermilk, sugar and add 2/3 of the flour little at a time; mix until the batter is homogeneous.

The leavened dough

Add gradually the butter cut into chunks and continue to knead until it is well absorbed (it took me 10 minutes at medium-high speed). Add the remaining flour and knead a few minutes. Let rise for about 1 hour in a lightly greased bowl and cover with a damp cloth.

After this time roll out the dough and engrave it with two pastry rings. Arrange the bagels well spaced on a parchement paper, cover with plastic wrap and let rise 30 minutes more.

Bake at 200° for about 8-10 minutes. Remove from the oven and brush them with melted butter. Roll them on caster sugar.
