I found out this recipe with a little variation in the ingredients, the ricotta cheese.
- 250 g flour 00
- 75 g cottage cheese (ricotta)
- 35 g butter
- 200 g caster sugar
- 7.5 g baking powder
- 100 g of eggs (2 eggs)
- 2.5 g of salt
- oil for frying
- powdered sugar for garnish
1. Sift the flour on a work plan and put in the center ricotta, butter, 25 grams of sugar, salt, yeast, eggs. Knead until it forms a ball, let the dough rest 15-20 minutes, covered with a cloth.
2. Roll out to a thickness of about 2.5 cm on a sheet of parchment paper cut to 2.5 cm wide strips and then cubes of 2.5 cm. Let rest another 15 min. always covered. Heat plenty of oil for frying to a temperature of 160°, fry the diced draining pasta a little at a time till they become golden.
