salty cake

Today I propose a recipe, that had great success in the last issue of  Open Kitchen Magazine, the salty cake, very simple and quick. 
Serve in slices or chunks accompanied by cheeses, salads, cold cuts.



Ingredients:

  • 180 g flour
  • 3 eggs
  • 10cl whole milk
  • 10cl olive oil
  • 250g ricotta cheese
  • 3 tbs grated Pecorino cheese
  • 100g of bacon cut into small pieces
  • 50g boiled chicory
  • a handful of boiled green beans
  • 12g baking powder
  • salt and pepper


Preheat oven to 180°
Chop the vegetables. In a bowl beat lightly the eggs with oil and milk. Add the flour sifted with baking powder, ricotta cheese, Pecorino cheese, bacon and the vegetables stirring with a spatula. Add salt and pepper. Pour the mixture into a greased and floured mold and bake for 50 minutes. Turn out the cake when cold.
